Thick courgette and leek soup

You will need

  • 1 tbsp olive oil
  • 300g (10oz) courgettes, sliced
  • 150g (5 oz) leeks, chopped
  • 2 potatoes, peeled and thinly sliced
  • 1 onion, peeled and thinly sliced
  • 1 clove of garlic crushed
  • 2 large tomatoes, deseeded and chopped
  • 900 ml home-made vegetable stock or filtered water
  • 1 bay leaf

To make

  1. Heat the oil and garlic in a saucepan, add the courgettes, leeks, potatoes and onion and sweat for 3-5 minutes, then add chopped tomatoes, vegetable stock and a bay leaf.
  2. Bring to the boil, cover, then lower the heat and simmer for 25 minutes.
  3. Remove the bay leaf. Pulse or purée to a smooth texture in a blender or food processor, blending in batches if necessary.
