Mixed root medley

You will need

  • 200g (7oz) parsnips, peeled and cubed
  • 200g (7oz) carrots, peeled and cubed
  • 200g (7oz) swede, peeled and cubed
  • 350ml (12floz) organic full-fat milk
  • 150ml (1/4 pint) boiling filtered water

To make

  1. Put all the vegetables into a saucepan with 300ml (1/2 pint) milk and the water. Cover and bring to the boil, then lower the heat and simmer for 20-25 minutes, stirring occasionally until the vegetables are tender.
  2. Purée in a blender or food processor, blending in batches if necessary, gradually mixing in the remaining milk to achieve the desired consistency.
