Homemade Vegetable Stock


Makes 1 litre

You will need

  • 1 onion, peeled and quartered
  • 2 carrots, peeled and diced
  • 3 sticks celery, trimmed and sliced
  • 1/2 leek (green top), sliced
  • Bay leaf
  • 1,5 litres cold filtered water

To make

  1. Put all the ingredients into a saucepan, bring to the boil, then lower the heat, half-cover with a lid and simmer for 1 hour.
  2. Strain the stock into a jug. discarding the vegetables. Cover and leave to cool. Store in the fridge and use within 24 hours or freeze in the pouches
