Courgette Purée – Stage 1

You will need

• 450g (1lb) courgettes

To make

1. Wash the courgettes under cold running water. Cut off the ends and slice the courgettes.
2. Put them in a saucepan and uncovered, then lower the heat. Simmer uncovered for about 5-7 minutes or until tender.
3. Remove from cooking liquid and purée in a blender of food processor to a smooth texture, using some of the cooking liquid to get the right consistency. Allow the mixture to cool.
4. Combine with another vegetable puree such as sweet potatoe
