You will need
- 1kg of carrots, peeled and chopped
- pinch of nutmeg (optional)
1. Wash the carrots under cold running water. Top and tail and either scrub well or peel. Put them in a saucepan and cover with freshly boiled filtered water. Bring to the boil, cover, then lower the heat and simmer for 12-14 minutes or until tender. Grate some nutmeg for extra flavour (optional)
2. Remove from the cooking liquid and puree in a blender or food processor, using some of the cooking liquid to get the right consistency. Allow the mixture to cool.
